Ingredients:
  • ½ lb Hatfield® Recipe Essentials™ Country Ground Sausage
  • 12 eggs
  • ½ cup onion, chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ cup cheddar cheese, shredded

Directions:
  • Preheat oven to 350°F.
  • Lightly grease 12 muffin cups, or line with paper muffin liners.
  • Heat a large skillet over medium high heat and stir in sausage. Cook until sausage is crumbly, evenly browned, and no longer pink, 10-20 minutes. Drain.
  • Beat eggs in large bowl. Stir in onions, salt, and pepper. Mix sausage and cheddar cheese. Spoon mixture into prepared muffin cups, until they are about full.
  • Bake in preheated oven until knife inserted in the center comes out clean, 20-25 minutes.
  • Tip: These muffins can be made frozen, and then reheated in the microwave, 1 minute 30 seconds.
