Ingredients:
  • 1 Hatfield® Oven Roasted Pork Loin
  • 1 Tbsp butter
  • 1 cup mushrooms, sliced
  • 2 Tbsp onion, finely chopped
  • 3 tsp fresh rosemary, chopped
  • 1 Tbsp garlic, minced
  • 1 Tbsp sherry

Directions:
  • Slice pork loin into 1-inch thick slices.
  • Place slices in skillet over medium high heat and brown for 1 minute each side. Remove from heat. Place cooked slices on plate, reserve drippings.
  • Add mushrooms, onion, rosemary, and garlic to pan with drippings. Cook over low heat for about 2 minutes stirring frequently.
  • Add sherry, stir to blend.
  • Return pork to pan. Spoon mushroom mixture over pork. Cover and allow to simmer for 3-4 minutes.
