  • 1 lb Hatfield® Recipe Essentials™ Ground Pork
  • 1 loaf French baguette, cut into ½-inch slices
  • ½ cup white onion, chopped
  • 6 eggs
  • 4 green onions, finely chopped
  • ½ tsp salt
  • ¼ tsp pepper
  • ⅔ cup salsa
  • ½ cup Monterey Jack cheese, shredded
  • ½ cup sour cream
  • ½ cup fresh cilantro, chopped
  • Preheat oven to 400°F.
  • Place sliced bread on two ungreased baking pans. Bake for 6-8 minutes or until lightly browned.
  • In skillet, cook onions and sausage over medium heat until pork is no longer pink. Drain and set aside.
  • In a small bowl, whisk together eggs, green onion, salt, and pepper. In the same pan with the sausage, cook and stir egg mixture in until set, then stir sausage in.
  • Spread salsa over top of sliced bread. Top with sausage mixture and sprinkle with cheese.
  • Bake 1-2 minutes or until cheese is completely melted.
  • Garnish with sour cream and cilantro.
