Ingredients:
  • 1 lb Hatfield® Recipe Essentials™ Hot Italian Ground Sausage
  • 1 Tbsp olive oil
  • ¼ cup feta cheese
  • 2 Tbsp toasted pine nuts
  • 2 Tbsp chopped sun-dried tomatoes
  • 2 scallions, chopped finely
  • 4 medium zucchini, halved lengthwise

Directions:
  • Preheat oven to 400°F.
  • In a sauté pan, heat oil over medium high heat. Add sausage and cook, stirring and breaking up with a spoon. Cook until sausage is fully browned, about 10 minutes.
  • In a medium bowl combine cooked sausage, feta, pine nuts, sun-dried tomatoes, and scallions.
  • To stuff the zucchini, hollow it out with a teaspoon.
  • Place in a rimmed baking sheet, fill with sausage mixture and roast until tender, about 15-20 minutes.
