Ingredients:
  • 1 lb Hatfield® Recipe Essentials™ Chorizo Ground Sausage
  • 2 tsp vegetable oil
  • 1 large white onion, finely diced
  • 1 poblano pepper, finely diced
  • 1 chipotle pepper in Adobo sauce, minced
  • ¼ cup cilantro, chopped
  • 8 oz pkg sour cream
  • Your favorite salsa
  • Queso fresco or Mexican shredded cheese
  • Avocado, sliced
  • Corn tortillas, warm

Directions:
  • Heat oil in a skillet over medium high heat.
  • Add half the onions and all the poblano pepper and cook, stirring, until softened and start to add color, about 6-8 minutes.
  • Add sausage and cook, stirring and breaking up with a spoon. Cook until sausage is fully browned, about 10 minutes. Stir in chipotle pepper and remove from heat.
  • Transfer chorizo to a warm bowl. Add remaining onion and fresh cilantro.
  • Serve immediately with tortillas, cilantro, sour cream, cheese, and avocado.
