  • 1 lb Hatfield® Recipe Essentials™ Ground Pork
  • 1 cup cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • ½ cup shallots, finely chopped
  • 4 large poblano chiles, roasted and peeled
  • 10 eggs
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 3 Tbsp garlic, minced

  • Preheat oven to 375°F.
  • In a large skillet, cook sausage until no longer pink. Drain.
  • Place sausage into a 13” x 9” baking dish.
  • Layer cheese, shallots, and green chilies.
  • In a medium bowl, beat eggs, salt, pepper, and garlic. Pour over cheese mixture.
  • Bake uncovered for 18-25 minutes or until a knife inserted in the center comes out clean.
  • Cool for 10 minutes and cut into 1” squares.
