2 pounds Hatfield Recipe Essential Chorizo Sausage
1 can chipotle chilies in adobo sauce
2 Tbsp Olive oil
2 bunches of scallion, chopped
1 ½ cups chopped onion, divided
1 ½ cups green peppers, chopped
1 ½ cups red peppers, chopped
2 Tbsp minced garlic
2 Tbsp chili powder
1 Tbsp ground cumin
Juice of 1 lime
2 tsp oregano
3 cans black beans, drained and rinsed
3 cans diced tomatoes, undrained
¾ tsp salt
½ tsp black pepper
Garnish: Sour Cream and Tortilla Chips
Remove 2 chilies from the can; finely chop.
Heat a large pot on the stove medium-high heat, add oil, chilies, 1 ¾ cup onion and peppers, and garlic sauté 5 minutes until tender.
Add chorizo, chili powder and next 5 ingredients, stirring to combine.
Bring to a boil, reduce heat and simmer for 35 minutes, occasionally stirring. Remove from heat add salt and pepper.
Ladle into bowls, top with sour cream and scallion, serve with tortilla chips.
