Marbled for Tenderness: The all-natural Hatfield® Premium Reserve Pork® process mimics the old-fashioned process of “larding” whole-muscle pork with modern technology to increase marbling in the pork muscle. Pork fat is removed from the outside of the loin and suspended into a pork-fat-and-brine solution, then infused into the whole-muscle product. By adding pork fat into the whole muscle, the product will be juicier, more tender and more flavorful.

Larding Technique: Larding is the culinary technique of inserting pieces of fat into a piece of meat that doesn’t have much fat of its own.
